2 lbs (6 cups)

Grated parmesian cheese

 

1 cup

Mayonaise

   
2 Eggs, beaten    

1/2 tsp.

Salt

   

1/4 tsp.

Pepper

   

1/2 cup

Soft bread crumbs

 

1 Tbsp.

Butter, melted

 

 

Instructions:

  • Cut, unpeeled, squash in bite size chunks. Boil in salted water for 10-15 minutes until just tender. Drain and cool slightly.
  • Combine mayonaise, eggs, cheese, onion, salt and pepper. mix with squash, stirring gently. pour into lightly greased 1 1/2 quart baking dish.
  • Toss the bread crumbs with melted butter and spoon over squash mixture.
    Bake uncovered @ 350º for 30 minutes.
